No Bake Mango Cheesecake

This is the best recipe for beginners to impress guests. Can be prepared in advance. Unleash the artist in you by placing slices of fresh mangoes in concentric circles. If you don’t have the patience or running out of time, pile a cup of the neatly chopped fruit and add a sprig or two of mint leaves on top.

Ingredients

1 cup fresh mango pulp

1 cup of cream cheese

1/2 cup fresh cream

3/4th cup sugar

1.5 tbsp agar

2 cup digestive biscuits

1/2 cup melted unsalted butter


Fresh Mango slices for garnish


 

Method
 
For the Cheesecake base:

  • Blend the digestive biscuits into a sand like texture.
  • Pour in the melted butter and mix well. Press the mixture into a greased cheesecake mould or springform pan.

 

For setting the Cheesecake:

  • Heat half a cup of water. Add in the agar agar and let it come to a boil.
  •  Turn off the flame and pour in the mango pulp. Mix well.

 

For assembling the Cheesecake:

  • Whisk the fresh cream, cream cheese and powdered sugar till smooth.
  • Mix in the agar agar and mango pulp mix.
  • Pour on top of the digestive biscuit layer and refrigerate overnight.
  • Top with slices of fresh mango.
